NDIWO RECIPE: COLLARD GREEN LEAVES
WITH PEANUT POWDER
7 cups or 1 lb. chopped collard greens
1 large size chopped tomato
1 and 1/2 cups raw peanut powder
2 cups water
1/2 teaspoonful of baking soda 1/4 teaspoonful
salt
• Pour 1 cup of water into a medium sized
cooking pot
• Add half a teaspoon of pure baking soda and
stir until thoroughly dissolved
• Place pot on burner on medium heat
• Add 7 cups of chopped collard greens and 1
chopped tomato
• Cook on medium to high heat for 5-8 minutes
• Add 1 and 1/2 cups of raw peanut powder,
1/4-teaspoon salt, and 1 cup of water
• Stir thoroughly and lower the heat to below
medium
• Cover and simmer for 15-20 minutes stirring
every 2-3 minutes to prevent the bottom from
burning
• Serve hot with nshima
Fried termites
At the beginning of the rainy season, termites begin
to emerge from their nests as they start to search
for appropriate mates. The termites are attracted
to light and only live a few hours, after which they
lose their wings. Termites are collected and are fried
with cooking oil and salt. The termites are cooked
for about 1 minute until they are crisp and golden
brown.

Most spirits and South African wines are available in
the cities. Major soft drinks and juices are also found
throughout the country. There are also several types
of beer or Mooba (in Nyanja) produced in Zambia.
Mosi lager is a bottled beer reflecting the local name
for Victoria Falls. It is one of the most popular beers
in Zambia.
The local beers are made of fermented maize meal,
which is extremely thick in consistency. It can be
found in all markets and township bars.
Shake-Shake, a more opaque beer is a favorite
amongst other less affluent Zambians.
Zambia has a long tradition of homemade brewed
and distilled beverages. The most popular and
strongest local alcohol is Kachusu, a distilled
spirit made of sorghum, maize, sour beer, sugar,
and yeast. This highly alcoholic drink is brewed
in villages or at shebeens, and it is both highly
dangerous and illegal. It is known to cause liver and
kidney damage.
IMPORTANT EVENTS
As mentioned earlier in this chapter, Zambia has a
number of traditional ceremonies that demonstrate
the local customs and culture in a truly meaningful
way.
The influence of western customs and the close
contact of various tribes living in the same areas
have caused a decline in the appearance of many
traditional customs. That being said, recent efforts
have been made to preserve the traditions.
Some of the most important ceremony includes
Kuomboka, N’cwala, Umutomboko, Ukusefya Pa
Ng’wena, and Likumbi Lyamulumbe, among others.
SHOPPING
In the past few years, Lusaka has quickly become
the center of Zambian shopping. Chain stores
and shopping malls are springing up all over the
sprawling suburbs.
Before 1996, the city’s main shopping center was
located on Cairo Road. This center held a number
of cramped private shops, making it difficult for
shoppers to ever find exactly what they are looking
for.
Shortly thereafter, Shoprite opened its flagship store
in the city center, which was then followed by the
opening of the city’s first shopping mall.
The complex at Manda Hill completely changed the
way shopping was done in Lusaka. It is safe and
offers plenty of parking. This is a favorite for both
visitors and locals alike.
